Sienisalaatti recipe, mushroom salad from Finland.

Serves four:

500 grams (1 pound) fresh Mushrooms
1 dl (0.4 cups) Double Cream / Whipping Cream
2 tbs Chives, finely chopped
1 tbs Lemon Juice
1.5 dl (0.6 cups) Water
1 tsp Sugar

Salt & Pepper

1. Bring the water to a boil together with the lemon juice. Add the mushrooms and let simmer for about 1-2 minutes.

2. Drain and let the mushrooms cool. Mix cream, chives, sugar, salt and pepper with the mushrooms in a bowl. Chill for atleast one hour before serving.

Serve on lettuce leaves if desired.
