kjotsupa recipe, Icelandic meat soup

Kjotsupa recipe, meat soup from Iceland.

Serves four:

600 grams (1.3 pounds) Lamb
1 litre (4 cups) Boiling Water
1 Onion
2 Potatoes
200 grams (0.45 pounds) Rutabaga
2 Carrots
1 tbs Rice
2 Bayleaves
3-4 Stock Cubes
1 dl (0.4 cups) fresh Parsley


1. Rinset the meat if necessary, add together with chopped onion, bayleaves and allspice into a large saucepan. Add boiling water until everything is covered.

2. Let boil up and then simmer for about 40 minutes or until meat is tender. After twenty minutes, add carrots, rutabaga, stock and potatoes cut in pieces.

Serve sprinkled with fresh chopped Parsley.
